The Cafec Deep 27 Guide

The Cafec Deep 27 Guide

The Cafec Deep 27 is built around depth. Its 27mm cone forces the water to travel further through the coffee bed, extending contact time and pulling out layers of sweetness and complexity that shallower drippers sometimes leave behind. It is a deliberate brewer for people who want to taste what the bean is really made of.

What You'll Need

  • Cafec Deep 27 dripper
  • Cafec Deep 27 paper filters
  • Burr grinder
  • Gooseneck kettle
  • Kitchen scale
  • Timer
  • Server or mug

Recipe

  • Coffee: 20g
  • Water: 300ml
  • Water temperature: 91 to 94°C
  • Grind size: Medium-coarse
  • Total brew time: 3 to 4 minutes
  • Ratio: 1:15

Steps

1

Place the Deep 27 filter in the dripper and rinse thoroughly with hot water to preheat the cone and eliminate any papery taste. Discard the rinse water.

2

Add 20g of medium-coarse ground coffee to the filter. The Deep 27 benefits from a slightly coarser grind than other drippers because its longer cone naturally extends contact time.

3

Set the dripper over your server on the scale and zero it out. Start your timer and pour 40ml of water evenly over the grounds for the bloom. Make sure every ground is saturated.

4

Let the bloom rest for 40 to 45 seconds. The deep cone traps heat well, so the bloom is especially active here.

5

Begin your second pour at 0:45. Pour in slow, concentric circles from the center outward, bringing the total water to 150ml by the 1:30 mark. Keep your pour gentle and controlled.

6

Continue pouring in the same steady pattern, reaching the full 300ml by 2:30. Avoid stirring or agitating the bed once the pours are underway.

7

Allow the dripper to drain completely. Total brew time should fall between 3:00 and 4:00. The Deep 27 runs slightly slower than most drippers and that is by design.

Tips

✦︎

Go coarser than your usual pour over grind. The 27mm depth already extends extraction naturally. A medium-coarse setting keeps the cup balanced and prevents over-extraction, which the long cone can tip toward if the grind is too fine.

✦︎

Pour slowly and keep your kettle low. The Deep 27 rewards a controlled, deliberate pour. Pouring too fast or too high agitates the bed unevenly and shortens the contact time the dripper was designed to give you.
