BEANS
From Finca El Paraíso in Cauca, Colombia, at 1,850-2,050 meters. The high altitude and cool climate allow for slow maturation and complex flavors.

PRODUCERS
Crafted by the Bermudez family, with Diego Bermudez leading the way. He is known for using biochemistry and thermodynamics to innovate coffee fermentation.

PROCESS
A thermal shock washed process. Cherries undergo anaerobic fermentation, then rapid temperature changes to halt fermentation and lock in a clean cup with vibrant floral and fruit flavors.
