The Process
The CGLE Yellow Bourbon undergoes a meticulous hybrid washed process, starting with careful hand-picking and dry depulping. The coffee ferments for 19-22 hours in whole cherries, followed by a second 35-hour fermentation in parchment and mucilage.
Once fully washed, the beans are mechanically dried at carefully monitored temperatures between 35°C (95°F) and 45°C (113°F) until they reach a final humidity of around 10.5%. This process ensures the ideal flavor profile with medium-high acidity and a medium dense body for a vibrant and balanced cup.
The Producers
Café Granja La Esperanza began in the 1940s when Don Rigoberto Herrera purchased the first farm, Potosí, in Colombia’s Valle del Cauca. Over time, the Herrera family expanded their operations, focusing on high-quality coffee and experimenting with new varietals and processing techniques. By the early 2000s, they became pioneers in Colombia’s specialty coffee scene, earning international recognition.
Today, the farm operates across five locations, cultivating rare varietals like Geisha and Yellow Bourbon while utilizing innovative fermentation and drying methods. Known for their award-winning coffees, they are recognized globally for their commitment to quality, sustainability, and innovation.
